I'm not using any HUD except the crosshairs for the bow, updates on what I get off a dead body, and detection metre. I don't want to use the health HUD even though I'll have the fatigue bar I have to worry about so I'll just hunt a lot and eat a lot to keep the bar up when not by a bedroll.

Add permadeath to it, and you will be shaking in every tough situation you manage to put yourself into. I've played like this for hundreds of hours and it's absolutely amazing. So yes, I fully recommend playing with those settings.
